DOMAINE MYRSINI
Nicolas Bourget used to be the chef in his own top restaurant and like every good French chef he also was a wine lover. So it was not a great surprise when Nicolas started studying oenology. It didn’t take so much time before the chef completely converted into a winemaker.
Originally from the Nantes region in France, in 2019 and together with his family, Nicolas decided to move to Greece, to the island of Paros in the middle of the Cyclades. First wines were planted very close to the sea, on the soil that is varying regarding the bedrock, but the majority of sandy soil is rich on iron, which gives to Myrsini wines a delicate metallic note to the main flavor.
The truth is always in the soil. But the Cycladic and Aegean winds shape the taste and structure of all Myrsini wines.
They are like the perfect seasoning, bringing freshness and iodized aromas to grapes, that later in the glass turn into brightness, pristine and balm. Myrsini wines remember us beauty of youth, slow life and unbearable lightness of being.
